Oh my gosh, I recently made Beef Enchiladas and a Tres Leches cake. I have never made red enchiladas sauce before. It turned out delicious. It was one of those meals that took all day but was worth it. For the Beef Enchiladas, I used a recipe from Cooks Illustrated. For the Tres Leches Cake, I used a recipe from Cooks Country.
